You don’t have to sauté, grill, or shape anything in this sliders recipe. Just divide the meat into two parts and smash down one half into a sheet pan, top cheese on it, then cover it with the second half of the meat.

- 2 tablespoons olive oil
- 1 large onion (thinly sliced about 3 cups)
- 2 chipotle peppers (in adobo finely chopped)
- 2 cloves garlic minced
- kosher salt
- black pepper freshly ground
- 1 1/2 pounds ground beef
- 4 ounces pepper od jack cheese cut into 12 equal pieces
- 1/4 cup ketchup
- 1 tablespoon balsamic vinegar
- 12 slider-size potato buns split and toasted

- Take a large skillet and heat oil in it on medium heat.
- Add onions and cook or 5 minutes so that their edges start turning brown. Stir occasionally and let the onions cook for 20 more minutes so that it is caramelized and turns brown.
- Add the garlic, chipotles, salt, and black pepper. Cook for another 1-2 minutes, or until properly combined. Then, turn off the heat.
- Preheat your oven broiler.
- Make 12 portions of the meat, each of about 2 ounces. Turn each into a 2.5-3-inch diameter patty with cheese stuffed in the center.
- Line a baking sheet with foil and place the patties on it. Sprinkle salt on all the patties.
- Broil for about 6 minutes, or until the cheese melts and the burgers are medium cooked and juicy (pink in the center)
- In a small bowl, mix ketchup, black pepper, and salt. Brush some ketchup on the burgers and layer the bottom halves of the slider buns with it.
- On each bun, place a burger and top it with some spicy onions. To finish, place the top halves of the buns on top.
- Serve warm.
