Low-carb Molten Lava Cake Recipe

  1. Preheat the oven to 350 degrees Fahrenheit. Combine the cocoa powder and erythritol and whisk properly so that any clumps are removed. This will improve the consistency of the cake.
  2. In a separate bowl, beat the egg until it turns a little fluffy. Since the cake is flourless, the aeration of a beaten egg is needed to help the cake to rise.
  3. Then add the egg, vanilla extract, and heavy cream into the cocoa powder and erythritol mixture. Also, add the baking powder and salt.
  4. Grease the mug with cooking oil. Then pour the batter in it and bake for 10 to 15 minutes at 350 degrees Fahrenheit. Do not let the cake to overcook, otherwise, the lava will not flow. The cake top should be properly set but jiggly.
  5. Hold the mug and plate together, firmly, and turn it upside down, so that your mug is face down on your plate. Tap the bottom of the mug a few times so that the cake easily slides off on the plate without any problem.
  6. Now the ice cream is layered underneath the lava cake. It will melt slightly now. When you cut the lava cake, its warm insides along with the ice cream will flow out beautifully.
