- 6 ounces Spicy chicken sausage links of 3 each and fully cooked cut into half-inch slices.
- 1/2 pound chicken tenderloins cut into half-inch slices
- 1 tablespoon olive oil
- 3 celery ribs chopped
- 1 large onion chopped
- 2-3/4 cups chicken broth
- 1 can diced tomatoes 14-1/2 ounces, undrained
- 1-1/2 cups uncooked rice long grain
- 1 teaspoon dried thyme
- 1 teaspoon Cajun seasoning

- Take oil in a large saucepan and sauté chicken and sausages for 5 minutes.
- Add onion and celery to it and sauté for another 6 – 8 minutes, or until the vegetables are tender.
- Add in the broth, rice, tomatoes, thyme, and Cajun seasoning and stir.
- Bring it to boil.
- Reduce heat, cover and simmer for 15 to 20 minutes or until the rice becomes tender.
- Let it stand for 5 more minutes.
